Cotton Jersey
How easy/hard is cotton jersey to work with?
The cotton jersey in question being 5% spandex and 95% cotton. Also, what would the likely texture and weight be of the said combination. I am looking to make a dress, so what kind of dress would be most suitable for the fabric I've described?

Cotton jersey rolls when stretched on the crossgrain (selvage to selvage). Although it's often used for dresses, I tend to encourage beginners to try a more stable knit like an interlock for their first few forays into sewing knits -- stretchy knits tend to be stretched out of shape during sewing by most beginners, unless they have access to a serger with differential feed.
Most patterns have a list of suggested fabrics on them -- and most beginners should stick to the list of fabrics or have help from someone experienced if they want to go off the list in a significant way.
If you have a pattern that specifies a medium weight fabric... let's say the pattern suggests cotton interlock... and you make it up in jersey, which hangs more closely to the body than interlock does, the interlock garment will look like the designer intended, and the jersey garment will look like it came from an inexpensive store. If you take that very same pattern that was designed for interlock and make it up in a much heavier knit -- say a heavy knit intended for something like ski pants -- the garment made of the ski pants fabric would look like you were wearing a circus tent.

Note that you shouldn't try to substitute a knit fabric into a pattern designed for woven fabrics (or vice-versa) until you've got more understanding of the differences between them.

Take into consideration how long you want to use this bedding. To get the most "bang for your buck", use themes and colors that are lasting and will grow with your baby boy's development.
