The foundation of any healthy low-carb eating is in its vegetable content. If you can get the organic baby herb salad greens in a bag- do it. The intensely flavored herbs kick up the flavors to an even greater degree of culinary intrigue.

Kathi Dameron's Mixed Greens With Grilled Chicken & Diced Apple

1. Layer a plate or bowl with plenty of mixed greens. I usually use a combination of spring greens, fresh herbs, spinach, red and white cabbage.

2. Nuke a mesquite grilled chicken breast. ( I buy mine at Sam's Wholesale Club and in my microwave they are cooked in 2 minutes and ready to slice and dice.) Sprinkle on greens.

3. Wash, slice and dice a red delicious apple. Sprinkle on greens.

4. Stir up a bit of citrus vinaigrette. My diet version is made with 1 teaspoon olive oil or canola oil, a big splash of a favorite gourmet flavored vinegar, fresh minced garlic, a big splash of fresh squeezed Florida grapefruit, orange, lemon, or lime. Sometimes I add a splash of a fruity Winner's Weight Loss supplement like Mixed Berry, and a pinch of salt-free and msg-free seasoning.

After a few days of low carb diet eating of nothing but meat, eggs, and cheese, even lettuce may start to look good. So when you feel the cravings for carbs kick in, be ready to head them off with a power salad, which will not only be a tremendous treat after all that protein. You can get pre-packaged salad mixes at the grocery store, so you don't have to buy huge amounts of different salad fixings. And if you go for organic salad mixes, and dress them up with organic ingredients, you'll have sweeter vegetables than you ever imagined.

One of the most nutritious ingredients you can add to any meal is spinach. This superfood has been shown to support eye health, as well as the brain, skin, and cardiovascular and immune systems. So be sure you salad mix contains spinach; even better, you can buy a bag of organic spinach leaves.

Spinach Raspberry Chicken Salad

1 tsp olive oil

2 boneless, skinless chicken breasts (3/4 lbs.) cut into bite-size strips

1 cup thinly sliced onion

Salt and Pepper to taste

1 6-ounce bag baby spinach or organic baby spinach salad mix

1/4 cup bottled raspberry vinaigrette dressing

1 cup fresh or fresh frozen raspberries, partially thawed

1/4 cup feta or bleu cheese

To Prepare:

Heat oil in large nonstick skillet or wok; add chicken strips and onion and stir-fry over high heat 3 to 5 minutes or until chicken is no longer pink in center.

Season chicken to taste with salt and pepper.

Turn off heat. Add spinach and vinaigrette to skillet; toss well.

Divide mixture among plates. Sprinkle each salad with raspberries and feta cheese.

Why does a few drinks put some people into a party mood, some aggressive and others ready to sleep? Personalities aside, there are six basic bio-chemical reactions to alcohol. Based on studies by Dr. Mathews Larsen, your biochemistry will determine how you will tend to act while drinking. (eg. A quiet lush or complete fool.) To take the following test match up the capital letter with a number and then read the results at the end. Answer these quickly and honestly for best results. You will probably see a pattern, which makes it simpler to solve your cravings.

A. Physical response

1. A few drinks make me feel sedated.

2. Drinking alcohol makes me uncoordinated and light headed.

3. Alcohol always makes me sick.

4. When I drink, I perform better and have lots of energy.

5. Alcohol first gives me a boost, but I tend to lose control and drink until I am drunk.

6. Alcohol used to give me a lift. Now, it steadies my nerves.

7. Drinking overcomes my depression temporarily, but later, the depression becomes worse.

8. (Women only) I need and use alcohol during premenstrual periods.

9. Usually, my first couple of drinks will have no effect on me.

10. I rarely felt depressed in my early drinking years. Now, alcohol temporarily lifts my depression.

B. First Alcohol Experience

1. I cannot remember my first drinking experience.

2. I liked the feeling when I first drank alcohol. I remember it well.

9. I rarely drink heavy, but get drunk easily on an empty stomach.

1. None of my family has a history of heavy drinking.

Up through the Victorian Ages, corsets were very popular with women. Corsets were worn to reduce waist size. A tiny waist made for an attractive figure.

Corsets were made from different materials over the years, including: stiffened linen, wood, whalebone, and wrought iron. Corsets were designed to cinch up very tightly in the back in order to restrict the waist size. Corsets also restricted movement, forcing a straighter posture. It was shameful for women to show any pain or discomfort felt by the severely tight corsets.
